Think Ondeh Macaroons, light cucumber cream cheese sandwiches, and old-school Tiong Hoe specialty coffee—simple yet oh-so-satisfying. And let’s not forget Christina’s signature tiramisu balls and green tea operas, each inspired by the artistry of fine ingredients and exquisite presentation. For one night only, a powerhouse team of female chefs will take over the kitchen, crafting a visionary three-course set menu. But this isn’t just any menu. Each dish tells a story—of dreams, aspirations, and memories—brought to life on every plate. Expect creativity, passion, and a whole lot of flavour. Here’s what you can expect…

INIZIARE | Korean Laver Chips Beef Tartare

Chef Nodi is set to bring a bold new twist to beef tartare, and we absolutely can’t wait to try it. Reinterpreting Dario’s signature dish, she will give it a Korean spin, swapping beef tendon for crispy nori. But that’s just the start. To take it even further, she will layer in rich flavours from her heritage, using Korean pear, gochujang, and pine nuts to create something truly special. Her journey has been just as inspiring as her food. From starting out as a pastry commis in Korea to mastering Italian cuisine in Singapore, she has never stopped pushing boundaries. Now, she dreams of becoming the next Chef Choi and hopes to inspire others to chase their own dreams too. And the best part? We’ll soon get to experience her take on this classic firsthand, and it’s bound to be unforgettable.

PRINCIPALE | Risotto Makhani with Spice Grilled Lamb

Chef Nithilia is bringing a bold Indian-Italian fusion to the table. Inspired by childhood memories of her mother’s biryani, she will reimagine Bottega di Carna’s signature NZ Lamb Rack with a vibrant mix of flavours. Think mint chutney, makhani risotto, and a medley of spices, all coming together in one unforgettable dish. But there’s more to her story. Now working in the pasta section, she is honing her craft, with dreams of making a name for herself. One day, she hopes to stand out with her own creations, sharing her unique take on Indian-Italian cuisine.

DOLCE | Latte di Soia Bastoncini di Pasta Fritta

Chef Jiao Min is bringing nostalgia to the table with a dessert that’s both playful and innovative. Inspired by childhood favourites like soya milk and youtiao, she will reimagine those comforting flavours in a fresh, modern way. Her Pasta Fritta will feature silky soymilk ice cream, fragrant pandan jelly, and a crunchy, chewy mix of peanuts, youtiao, and mochi. But this isn’t just about sweetness—it’s about storytelling. In a physically demanding industry, she finds joy in pushing boundaries and creating desserts that spark conversations. With every bite, she hopes to bridge the past with the present, blending tradition with creativity.

3. A WOMAN IS… UNSTOPPABLE | Jungle Ballroom’s All-Female DJ Line-up

What’s a party without killer beats? At Mondrian, the night will be all about bold energy and unstoppable rhythm. Jungle Ballroom is set to light up with an all-female DJ lineup, bringing the sounds that move and inspire us. And to turn up the celebration even more, there’s “PURPLE REIGN”. Guests dressed in purple—symbolising strength, passion, and International Women’s Day—will score a complimentary drink. So, throw on your best purple fit, hit the dance floor, and get ready for a night of music, movement, and pure celebration!

Here’s what you can expect: Two of Singapore’s most dynamic female DJs will be taking over the decks, setting the perfect vibe for the celebration. First up, Kylie Nicole—small in size but big on energy. She will mix the raw bass of ghetto house with old-school hip-hop grooves, keeping the crowd moving all night. Then there’s Zafirah, a true pioneer in Singapore’s music scene. She will blend disco, nu-disco, and tech-house into hypnotic, high-energy sets that will take the party to another level.
